Note: You can also thicken the broth into a gravy if desired. Simply remove the vegetables and roast from the crock pot, then whisk in a mixture of cornstarch and water until the desired consistency is reached. Return the roast and vegetables to the crock pot to keep warm until serving.

– 3-4 pounds of beef roast (such as chuck or round)
– 2 tablespoons of vegetable oil
– 1 onion, sliced
– 4 cloves of garlic, minced
– 4 carrots, peeled and cut into chunks
– 4 potatoes, peeled and cut into chunks
– 2 celery stalks, sliced
– 1 cup beef broth
– 1 cup red wine (optional)
– 2 tablespoons Worcestershire sauce
– 1 tablespoon tomato paste
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste
