  • Chicken Alfredo is perfect for a weeknight dinner: Super juicy pieces of chicken in a smooth and creamy, extra cheesy alfredo sauce.

When it comes to refreshing and vibrant flavors, it’s hard to beat a citrus salad with fennel and avocado. This simple yet elegantly composed dish combines the sweet and tangy notes of citrus fruits with the subtle licorice-like flavor of fresh fennel, balanced by the creamy richness of avocado. The result is a salad that not only looks stunning but also awakens your taste buds with a burst of citrusy goodness.

At the heart of this citrus salad is a selection of bright and juicy citrus fruits. Choose a variety of oranges, grapefruits, and even blood oranges for a beautiful medley of colors and flavors. Segment the fruits, removing the bitter pith and membrane, to reveal the succulent and vibrant flesh. The combination of sweet and acidic flavors from the citrus fruits creates a perfect balance that lends itself well to the other ingredients.

Next, add thinly sliced fennel to the mix, bringing a crisp and refreshing element to the salad. Fennel’s mild licorice flavor adds a unique twist and complements the citrus beautifully. Its crunchy texture and delicate aroma enhance the overall sensory experience of the dish. Tossed together with the citrus segments, the fennel adds a pleasant contrast in both taste and texture.

The classic chocolate chip cookie can do no wrong and only makes life better, happier…and much more satisfying

Are you in this mega fan club? What do you buy there? And why? If you are in the Twin Cities like me… did you know they have a newly renovated Roseville location? Um, yeah.

Don’t reach for one right away.

At first, I was going to do my basic tahini dressing, but then the thought of a basil dressing came t0 mind so I switched it up.

It’s a simple mix of basil pesto, tahini, and lemon. I also added a splash of red wine vinegar. The tahini makes it extra creamy and the pesto adds that herby, garlicky flavor. And when you toss it all together with the crispy chicken?

The classic chocolate chip cookie can do no wrong and only makes life better, happier…and much more satisfying. I know you know what I’m talking about, cookies are just GOOD. I’m not sure why, but I’ve really been on a HUGE cookie kick this year. Maybe it’s because most are easy to make. Or maybe it’s because cookies bring back the best memories for me. Or maybe it’s just because the world simply needs more cookies this year. Either way, I’m loving cookies.

1. How to Cook

I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these eggs.

2. Easy recipe

How cute are these egg boats? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe being very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these boats couldn’t be easier to make or more delicious.

How to Make a Delicious Citrus and Avocado Salad with Crisp Fennel

To tie everything together, slices of creamy avocado complete this enticing salad. Avocado adds a buttery richness that not only serves as a complementary flavor but also provides a smooth and velvety texture. Its subtle nuttiness pairs wonderfully with the bright citrus notes and adds a satisfying creaminess to every bite.

To enhance the flavors even further, drizzle the salad with a simple dressing made from freshly squeezed citrus juice, olive oil, a touch of honey, and a pinch of salt. This light and tangy dressing bring all the ingredients together while elevating their natural flavors. The dressing also adds a pleasant acidity that cuts through the creamy avocado and brightens the overall taste profile of the salad.
