I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these eggs.

How cute are these egg boats? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe being very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these boats couldn’t be easier to make or more delicious.

Fennel and avocado salad
To make this recipe, you will need to peel and segment the cara cara oranges, navel oranges, and mandarin oranges. Cut off the white pith and discard any seeds. Arrange the citrus segments on a large platter along with some arugula and cooked chickpeas. Sprinkle some chopped pistachios on top for some crunch. In a small bowl, whisk together some lemon juice, olive oil, salt and pepper to make a simple dressing. Drizzle the dressing over the salad and garnish with some fresh mint leaves. Ingredients:
- 3 medium oranges (you can use navel, blood, or cara cara oranges)
- 1 large grapefruit or pomelo
- 1 large fennel bulb
- 1/4 red onion
- 2 ripe avocados
- Salt and pepper to taste
- 1/4 cup chopped fresh mint leaves
- 2 tablespoons chopped fennel fronds
- 1/4 cup toasted pine nuts or almonds (optional)
Dressing:
- 1/4 cup champagne vinegar or white wine vinegar
- 1/4 cup extra virgin olive oil
- 1 small shallot, minced
- Salt and pepper to taste
Instructions:
- Use a sharp knife to cut off the peel and pith of the citrus fruits. Cut them into thin slices and remove any seeds. Set aside in a large bowl.
- Cut off the stalks and fronds of the fennel bulb. Reserve some fronds for garnish. Cut the bulb in half and remove the core. Slice the bulb thinly using a mandoline or a knife. Set aside in another bowl.
- Peel and slice the red onion thinly. Add it to the bowl with the fennel.
- Cut the avocados in half and remove the pits. Peel and slice them thinly. Sprinkle some lemon juice over them to prevent browning.
- To make the dressing, whisk together the vinegar, olive oil, shallot, salt, and pepper in a small jar or bowl.
- To assemble the salad, arrange half of the citrus slices on a large platter. Sprinkle some salt and pepper over them. Add half of the fennel and onion mixture on top. Drizzle some dressing over them. Repeat with the remaining citrus, fennel, onion, and dressing.
- Add the avocado slices on top of the salad. Season with more salt and pepper if needed. Sprinkle the mint leaves, fennel fronds, and pine nuts or almonds over the salad.
- Serve immediately or refrigerate until ready to eat. Enjoy your refreshing citrus salad with fennel and avocado!
