At first, I was going to do my basic tahini dressing, but then the thought of a basil dressing came t0 mind so I switched it up.

It’s a simple mix of basil pesto, tahini, and lemon. I also added a splash of red wine vinegar. The tahini makes it extra creamy and the pesto adds that herby, garlicky flavor. And when you toss it all together with the crispy chicken?

1. How to Cook

I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these eggs.

2. Easy recipe

How cute are these egg boats? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe being very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these boats couldn’t be easier to make or more delicious.

Preparation Steps

Pineapple Preparation

To prepare the pineapple for the spicy serrano pineapple margarita, start by slicing off the top and bottom of the pineapple. Then, slice off the skin in sections, making sure to remove all of the eyes. Cut the pineapple into small chunks and set aside.

Serrano Pepper Infusion

To infuse the serrano peppers into the tequila, start by slicing the peppers in half lengthwise and removing the seeds. Add the peppers to a jar with tequila and let it sit for at least 24 hours. The longer it sits, the spicier it will be. Once the infusion is complete, strain out the peppers and discard them.

Mixing and Shaking

To make the spicy serrano pineapple margarita, start by adding the pineapple chunks to a blender and blending until smooth. In a shaker, combine the pineapple puree, serrano-infused tequila, lime juice, and agave nectar. Shake well to combine.

Serving Suggestions

To serve, rim a glass with salt and fill with ice. Strain the margarita into the glass and garnish with a slice of fresh pineapple and a slice of serrano pepper. For an extra kick of heat, add a few drops of hot sauce.

Enjoy the spicy serrano pineapple margarita as a refreshing and flavorful cocktail.

Extra Spicy Version

For those who love an extra kick of heat, add an extra serrano pepper or a few dashes of hot sauce to the original recipe. Experiment with different types of hot sauce to find the perfect level of spiciness. For a milder version, remove the seeds and membranes from the serrano pepper before muddling.
